Paneer Bhurji (Scrambled Indian Cottage Cheese)

Good afternoon,

My love for paneer (Indian cottage cheese) knows no bounds! Paneer is my favorite and I am glad that my kids like it as well but my husband doesn’t ! Somehow this time, I convinced him to taste bhurji and to my surprise, i noticed that he silently reached out for the bowl again! I knew instantly, without him uttering a word in my praise that this dish is a hit and next time no convincing is required!! (haha)

You can serve it in lunch or dinner as a side dish and the leftover bhurji can be used to make delicious sandwiches. You can use store bought paneer but I recommend using homemade paneer and as it does make a difference to the texture and taste of dish.

250 gm Paneer (Indian cottage cheese)
1 green chilli, finely chopped
1 medium onion, finely chopped
1 medium tomato, tightly chopped
2 tsp ginger garlic paste
1/4th tsp cumin seeds (jeera)
1/2 tsp red chilly powder (I have used kashmiri mirch powder)
1/2 tsp turmeric powder (haldi)
1/2 tsp coriander powder
1/4th tsp garam masala
2 tsp refined oil
Salt to taste

Method

1. Heat a pan, add 2 tsp oil, now add cumin seeds and let them turn brown & release earthy aroma!

2. Add 2 tsp ginger garlic paste, saute till raw smell goes away (usually for 10-15 seconds on low flame)

3. Add finely chopped green chilli & chopped onion, saute till translucent.

4. Add red chilly powder, turmeric powder, coriander powder & chopped tomato. Saute till the masala paste starts to leave oil.

5. Add Paneer (cottage cheese) and salt to taste. Mix well & cook for few minutes on slow flame. (Don’t overcook the paneer as it can become chewy)

6. Garnish with fresh chopped coriander leaves and serve hot.

Easy Mango Pudding!

This mango pudding is as simple as a pudding could possibly be! This is gelatin free and has a sweet and tangy taste to it. It is so good for those weeknight cravings, just whip up the below mentioned ingredients and freeze! The picture shows 4 moulds with mango pudding because we wanted to enjoy small sweet bites so divided the pudding that’s meant for two into four!!

I have used safeda variety of mango in my pudding as it is sweet and fibreless. For the topping, I have used the totapuri variety of mango, to get that little sweet & tangy flavor at the top! It is the combination of these two varieties of mango that gives this dish it’s amazing flavor.

8-10 saffron strands soaked in 2-3 tsp warm milk

1. Put the mango pulp in a mixer/processor and make a smooth puree. (The safeda variety of mango, which I have used for this pudding is naturally very sweet. I recommend adjusting the quantity of sweetened condensed milk accordingly)

2. In a large bowl, mix mango puree, cinnamon powder, sweetened condensed milk, saffron milk, fresh cream and mix well.

3. Pour the mix in serving dish/bowls (I have used baking moulds) and put chopped mango bites at the top.

4. Garnish with saffron strands and keep it in the freezer for 3 to 4 hrs before serving.

Flavored Butter

Good Morning,

The restricted movement because of corona virus spread has changed the way we shop. Few stores are open & the fear of contracting virus is not letting us visit our favorite stores and shop around. My kids were missing their store bought spreads and that made me think of this recipe. It is very easy and tasty too! This is my first attempt at making flavored butter and it came out really well. I will definitely try, some other combinations of herbs and spices, to make some more different and tasty versions of it.

  1. Let the butter soften (soft enough to work with!) at room temperature. Mash it, with the help of a fork/spatula.
  2. Add crushed garlic, Italian seasoning, ground black pepper & chilly flakes, Mix well.
  3. Place the butter in a food wrap paper and twist the ends, like that of a toffee!
  4. Refrigerate and use when needed.

Tips & Variation

  1. If you are using unsalted butter than add salt as per your taste.
  2. You can use some fresh herbs like rosemary, thyme, parsley or dill in combination with the spices.

Nariyal Ladoo (Coconut Dessert Balls coated with Almond Powder)

Nariyal Ladoo, this Indian coconut sweet dish is high in calories but that doesn’t mean we can not indulge occasionally, eating in moderation is the key!

This is a easy recipe that requires only 4 ingredients. I have given this recipe a little twist. Conventionally the nariyal ladoos are coated with coconut powder but i am using almond powder instead!

3-4 powdered Ilaichi (Cardamom)
Sweetened condensed milk 200 gm or half of one 400 gm tin

  1. Roast 2.5 cups of coconut powder on low flame for 4 minutes. Stir continuously.
  2. Add Ilaichi (cardamom) powder & sweetened condensed milk. Stir & mix well for 2 more minutes, It should coat the coconut well.
  3. Let the mixture cool down, you can start making round balls, when the mixture is slightly warm.
  4. Roll the balls into almond flour and refrigerate for few hours before serving.

BESAN LADOO (ROUND DESSERT BALLS MADE WITH GRAM FLOUR)

Yesterday, I made these yummy Besan Ladoos for my kids as they were craving for something sweet. This became our summer project and we enjoyed making it together! This is a easy recipe and very popular in India. You fill find lot of different versions of these ladoos in India, with melon seeds, jaggery, boora, almonds but i like it plane and easy with just a few ingredients.

Good to Know

Besan (Gram Flour) is rich in protein and complex carbohydrate. It is high in folate, Vit B6, fiber and Iron. Since we are using lot of ghee and sugar in this recipe, it is best to consume these ladoos in moderation.

3-4 powdered Ilaichi (Cardamom)
1 cup powdered sugar
3/4th cup Desi Ghee (Clarified Butter)

Method

  1. Add besan in a Kadhai and roast on low flame for 10 minutes. Add Desi ghee and keep on roasting, let the besan combine well with ghee. Use 1/2 cup ghee, if you want your ladoos to be more firmer.

2. After about 20-25 minutes the besan starts to release ghee. By now it should be little dark in color. Keep on roasting till it becomes golden brown. (proper roasting of besan is very important, if it is under roasted, it will have a raw smell to it and ladoos won’t taste good and over roasting will make the besan bitter)

3. Turn off the flame, after about 30-35 minutes of roasting. Let it cool down and transfer it to a large bowl.

4. When the besan is slightly warm, add powdered sugar and Ilaichi (cardamom) powder, mix well with hands. (Do not mix sugar in hot besan, as it will melt the sugar)

5. Prepare round ladoos and enjoy!

Summer cocktail-Raw Mango with Vodka

  1. Peel and chop the raw mangoes in small pieces, discard the seed.
  2. Add 1 cup water and chopped mangoes in a saucepan, boil till mangoes are soft. Let it cool down.
  3. Mix the pulp, black salt, roasted cumin powder, salt and sugar in a mixer/ processor. Don’t mix it for too long, we don’t want a fine puree.

5. Pour the mixed pulp in tall glasses, add 30 ml vodka in each serve along with water. Taste and adjust the spices. Add Ice cubes & serve chilled.
