Flavored Butter

Good Morning,

The restricted movement because of corona virus spread has changed the way we shop. Few stores are open & the fear of contracting virus is not letting us visit our favorite stores and shop around. My kids were missing their store bought spreads and that made me think of this recipe. It is very easy and tasty too! This is my first attempt at making flavored butter and it came out really well. I will definitely try, some other combinations of herbs and spices, to make some more different and tasty versions of it.

Butter is high in fat & calories but it a good source of Vitamin A, which is good for skin & eyes. Eat in moderation and enjoy your flavored butter!

Ingredients

100 gm Salted Butter
2 crushed garlic cloves
1/4th tsp ground black pepper
1/4th tsp chilli flakes
1/4th tsp Italian seasoning or oregano

Method

  1. Let the butter soften (soft enough to work with!) at room temperature. Mash it, with the help of a fork/spatula.
  2. Add crushed garlic, Italian seasoning, ground black pepper & chilly flakes, Mix well.
  3. Place the butter in a food wrap paper and twist the ends, like that of a toffee!
  4. Refrigerate and use when needed.

Tips & Variation

  1. If you are using unsalted butter than add salt as per your taste.
  2. You can use some fresh herbs like rosemary, thyme, parsley or dill in combination with the spices.

Toast your bread with this butter using bread toaster or on a tawa, and you will get that wonderful garlic bread taste. Enjoy!

Mint chutney is full of flavors and is a wonderful accompaniment to have with fritters, rice dishes, raita, tikkas and other snacks. There are many versions of this chutney/dip as it is widely used in Indian homes and we all have our own favorite way of making it. I am sharing my version here.

Mint is an aromatic herb, rich in nutrients and is used (especially in Indian households to help relieve Indigestion. It also helps manage blood sugar levels and treat skin conditions.

Makes One small bowl of chutney

Ingredients

  1. Fresh Mint leaves : 2 bunches
  2. Fresh coriander/cilantro (dhania) leaves : one bunch
  3. Two Green chillies
  4. 4-5 Garlic cloves
  5. 1-2 small pieces of Raw mango or half tomato (optional)
  6. 1 tsp lemon juice
  7. 1-2 tsp water
  8. Salt to taste

Method

  1. Put all the ingredients in a chutney jar (grinder) and grind them.
  2. Check and if you find it too thick, add little water to get the desired consistency.
  3. Store in a airtight container, refrigerate and use when required. This can be stored for 3-4 days in the refrigerator.

Use a mortar and pestle, if you have one, you will find the taste and texture different and more appealing.

Tips

  1. Add few tsp of curd/yogurt while grinding and enjoy with fritters.
  2. Add 1/4th cup freshly grated coconut in the grinder along with other ingredient and enjoy with south Indian dishes.
  3. Don’t grind the chutney in the electric jar for too long, otherwise it turns bitter.
