Vegetable Fried Rice
Good Morning,
I just opened my fridge and noticed some leftover rice and veggies and I am gonna use this to prepare vegetable fried rice. It is bad to waste food anytime of the year but given the current condition with this covid19 pandemic, it is nothing less than preposterous now! The whole country is under lock down & we are going out, only when absolutely necessary. I went out from my house (just a few meters away) around 5 days back, that too for milk and veggies. Last time, I used only Schezwan fried rice masala in my recipe and it turned out to be very spicy for my family, so I decided to adjust the spices, give it my own twist and this time it’s exactly the way I wanted it to be, nice, little spicy and full of flavour.

Ingredients | Qty |
Cooked Rice | 2 cup |
Refined oil/olive oil | 3 tsp |
Cottage Cheese | ½ cup cubed |
Peas | 1/2 cup boiled |
Tomato | 1 small diced |
1 small Carrot | Chopped and boiled |
Onion | 1 medium (finely chopped) |
Mixed coloured capsicum | 1 cup diced |
Garlic | 1 tsp chopped |
Soya sauce | 1 tsp |
Dried Oregano powder | ½ tsp |
Red chilli powder | 1/4th tsp |
Schezwan fried rice masala | 3/4th tsp |
Salt | To taste |
Ps: You can add any available vegetable of your choice like beans, cabbage, spring onions, mushrooms etc.

Method |
1. Heat oil in a pan on high flame, add garlic and sauté it for few seconds. (i like garlic in my fried rice but my kids don’t, so you may skip garlic in your recipe just like i did this time!) |
2. Add onion and let it turn translucent on medium flame. |
3. Add cottage cheese (paneer) and fry for 30 seconds on medium to high flame. |
4. Add Boiled & other chopped vegetables (here I have used boiled peas and carrot, chopped green, yellow capsicum & tomato). Fry for a minute or two. |
5. Add soya sauce, oregano powder, little salt, little red chilly powder, 3/4th tsp Schezwan fried rice masala. |
6. Add cooked rice and fry for 2 minutes |
7. Garnish with fresh coriander leaves or fresh chopped spring onions |
